MELBOURNE – PORK & PINOT NIGHT
Wilson & Market is teaming up with Yarra Valley winery Santolin to host a special Pork & Pinot night on Wednesday 27 June. Set to certainly warm up a winter’s night, guests can expect a menu created by acclaimed chef Paul Wilson using gold medal winning Berkshire pork, paired with award-winning vintages and museum releases from Santolin.
Santolin’s ethos is all about tradition, focusing on minimal intervention in the winemaking process to showcase the Yarra Valley region in its purest form. The husband and wife duo utilise wild fermentation for small batch, handcrafted wines, all made from select single vineyards.
Acclaimed chef Paul Wilson will create a nose-to-tail menu using Victoria’s family-owned McIvor Farm, where the pork is ethically farmed, pasture-raised and free from GMOs, hormones and antibiotics. Its marbled meat is prized for its delicious juiciness and flavour. Expect the likes of Portuguese style pigs trotter and Cloudy Bay clam hot pot, pork belly with mud crab, apples and celeriac, porchetta with castlefranco and mustard fruits and Bramley apple pie with cheddar ice cream.
Premium pairings with be with the likes of Santolin’s 2012 ‘Syme on Yarra’ Pinot Noir, as well a bonus glass of the 2013 ‘Yarraland’ vineyard Chardonnay, which was awarded five trophies, including two internationals. Both wines are museum vintages, no longer available to buy. Current vintages of the Gruyere Pinot Noir and the Gladysdale Pinot Noir will also be showcased at this special dinner.

World Gin Day is also just around the corner, and Wilson & Market will celebrate in style with a pop-up gin alley on Saturday 9 June in its stylish Terrace Bar.
Expect a mini gin festival, with creations from Sweden’s first dedicated gin distillery, Hernö, Wisconsin’s Death’s Door Distillery, and London’s Fords Gin, as well as local heroes, Melbourne’s Death Gin, Adelaide Hills Distillery and Brunswick’s Patient Wolf. Vanguard Luxury brands will be offering limited edition cocktails using these world class gins, which will also be available for tastings and in classic G&Ts using Australia’s premium Capi tonic.
The afternoon concludes with the ultimate happy hour into the night, where all 50 Wilson & Market gins are available for two for the price of one.
