Wilson & Market – Good Beer Week 2018 – Melbourne
Prahran’s premiere venue Wilson & Market will host two special events in this year’s Good Beer Week program. Award-winning chef Paul Wilson has teamed up with local suppliers and breweries to get crafty for the festival. This will also coincide with the launch of Australia’s first purple corn craft beer from Bridge Road Brewery, a creation that Paul has been working on with brewer Ben Kraus since 2015.First up for Good Beer Week is Biodynamics & Beer in partnership with Stone & Wood and Transition Farm on Saturday 12 May. Expect a generous feast of sustainable seafood and wood roasted ethically farmed meat, alongside abundant plant based and vegetarian gastronomy to thrill all food lovers. Beer crafted with the same integrity and unique flavour will be matched to each wave of delicious sustainable, seasonal and natural food.
Wilson said: “Vegetables, like craft beer, are the new forces in progressive dining and are a chef’s best friend.” Both Paul Wilson and Transition Farm’s Robin and Peter Carlyon grow unique and exotic varieties of biodynamic vegetables, fruit, plants and herbs.
Some of the menu highlights include spicy tuna and rocoto chili with Chioggia beetroot salad and chermula prawns with Moroccan style heirloom carrots, both dishes matched to Pacific Ale. Twice cooked wood-grilled sugarloaf with guanciale and Roquefort cheese will be matched to the Hoppy Potato Ale, wood grilled Hakurei turnips in seaweed butter will be matched to The Wilderness and for dessert, chocolate parfait with Seville organs will be matched to the Imperial Stout.
Guests will hear from Transition Farm’s Robin and Peter Carlyon, Wilson & Market’s Paul Wilson and a guest speaker from Byron Bay’s Stone & Wood Brewery.

Next up for Good Beer Week is BBQ & BREWS on Friday 18 May, which will be a Meatopia and craft beer extravaganza in the stylish Terrace Bar section of Wilson & Market.The event will showcase luxe barbecue, a myriad of bench mark craft brews, and a special keg of Australia’s first purple corn craft beer from brewer Ben Kraus of Bridge Road Brewery, made from the superfood revered in South America. Paul discovered purple corn on his culinary travels; the beer is inspired by chicha morada, a drink brimming with health benefits due to high levels of antioxidants. Wilson adds: “Purple corn is now grown in Queensland so Australians can enjoy its natural health benefits, it’s very versatile so we’re looking forward to all the tasty things we can create with it.”
This fun event is a stand-up block party complete with DJ, pop up beer stations, delicious barbecue and charcuterie creations from Paul Wilson and Gamekeepers.
Menu highlights include warm wood-roasted oysters with wheat beer and spiced cheese gratin, crispy prawns with mayday sour amber and tamarind barbecue sauce, Peruvian style wood roasted purple corn beer chicken with Amarillo sauce and other delicious barbecued creations. Dessert will be the decadent warm chocolate brownies with Porter coffee sabayon.
