Welcome Back to Saké Shaun Presland!

Rockpool Dining Group welcomes Shaun Presland back to the fold, as Saké Executive Chef, and Resident Chef at Saké The Rocks.

Shaun was a key member of the launch team of the first Saké Restaurant & Bar in The Rocks in 2008, and oversaw the broader group of Saké restaurants in Double Bay, Hamer Hall in Melbourne, and Eagle Street Pier in Brisbane.

Shaun’s return is to lead culinary vision, innovation and execution for the whole Saké brand.

Shaun has mostly been travelling in New York, London and Tokyo, where he won the silver prize at the Washoku World Challenge 2016.

Rockpool Dining Group Chief Executive Officer, Thomas Pash, said the seven years Shaun spent with Saké means he has a deep connection with, and understanding of, the group.

“Shaun is one of Australia’s most esteemed contemporary Japanese chefs, and we’re looking forward to tapping back in to his extensive Japanese culinary skills and knowledge of the craft,” Mr Pash said.

“It’s great to have him back on board. He will play a fundamental role in taking the Saké brand to the next level and its expansion to new markets.”

Shaun said he was thrilled to be back with the group: “Saké feels like home, and I’m looking forward to taking the inspiration from my recent travels and applying it to some new dishes for the Saké fleet.”

Rockpool Dining Group Culinary & Brands Director, Neil Perry, said he was looking forward to working closely with Shaun to continuously improve the Saké dining experience.

“Shaun has exceptional Japanese culinary experience and a long history with the group, and I’m looking forward to working on some new menu additions with him and the team.”

Shaun and Head Chef, Richard Slarp (Saké The Rocks), are working on some new menu items, along with their team, to be introduced over coming weeks.

Neil, Shaun, and Richard, are also working on some new and exciting Omakase menus for the group.
